INGREDIENTS

METHOD

  • 1 Tbs Sesame oil
  • 1 clove garlic, minced
  • 1 knob ginger, minced
  • 1 small chili, sliced (optional)
  • 500g lean pork mince
  • 100g mushrooms, sliced
  • ½ capsicum, sliced
  • 1 carrot, grated
  • 1 zucchini, grated
  • 3 Tbs soy sauce
  • Zest and juice of 1 lime
  • ½ cup coriander leaves, chopped
  • 1 radicchio lettuce
  • 4 Tbs crushed cashews
  • 2 Tsp black sesame seeds
  • 4 lime wedges to serve
  1. In a large wok or fry pan, heat sesame oil over medium-high heat. Add garlic, ginger, chili and pork mince. Cook, breaking up with a wooden spoon.
  2. Add mushrooms, capsicum, carrot, zucchini. Cooking for a further 3 minutes.
  3. Add lime zest, juice and soy sauce and stir, turn heat off and continue to stir.
  4. Meanwhile, peel single lettuce leaves, wash and pat dry.
  5. To serve, use a lettuce leaf as a cup, spoon in some of the pork mixture, top with coriander, cashews, sesame seeds and a squeeze of fresh lime.
